- 8 peeled and sliced potatoes
- 8 thin slices of lean ham
- 1 cup green olives
- 2 teaspoons vinegar
- 1/2 cup chopped parsley
- 4 green onions ( or red ), sliced
- salt and pepper to taste
Boil the potatoes in a large pot with water and salt. After they are cooked, let them cool.
Cut them into cubes, add ham, olives, parsley and onion rings.
Mix vinegar with salt and pepper and add them to the salad.
